Vanilla Cashew Coconut Smoothie
Ingredients:
- 1 cup frozen blueberries
- 1 cup frozen cauliflower (I buy a head of cauliflower, chop and freeze it myself. Saves money and limits my use of plastic!)
- 3/4 cup unsweetened coconut milk (I used a vanilla flavored milk, but you can add a 1/4 tsp of vanilla extract if you only have unflavored milk!)
- 1 scoop vanilla protein (I love Nuzest and Plantworks Nutrition)
- 1 heaped tbsp cashew butter (or 2 tbsp raw cashews)
- Optional: frozen banana
Instructions:
- Chop and freeze cauliflower if necessary
- Add frozen ingredients to blender first, then pour milk over. Allow to sit for about a minute for easier blending
- Blend!
- Add protein powder and cashew butter/cashews
- Blend!
