Vanilla Cashew Coconut Smoothie

Ingredients:

  • 1 cup frozen blueberries
  • 1 cup frozen cauliflower (I buy a head of cauliflower, chop and freeze it myself. Saves money and limits my use of plastic!)
  • 3/4 cup unsweetened coconut milk (I used a vanilla flavored milk, but you can add a 1/4 tsp of vanilla extract if you only have unflavored milk!)
  • 1 scoop vanilla protein (I love Nuzest and Plantworks Nutrition)
  • 1 heaped tbsp cashew butter (or 2 tbsp raw cashews)
  • Optional: frozen banana

Instructions:

  1. Chop and freeze cauliflower if necessary
  2. Add frozen ingredients to blender first, then pour milk over. Allow to sit for about a minute for easier blending
  3. Blend!
  4. Add protein powder and cashew butter/cashews
  5. Blend!
