Olive Oil Nectarine Cookies

STONE FRUIT SEASON COMING IN HOOOOOOOT!

These cookies were born as a result of an extremely ripe nectarine that was about ready to be discarded and my desire to make a simple cookie recipe that was pantry friendly.

Truly, a star was born.

Olive Oil Nectarine Cookies

Ingredients:

Wet:

1 egg

1/4 cup olive oil

1/2 of a nectarine, blended

1 tsp vanilla extract

Dry:

1 + 1/2 cup rolled oats, blended

1/4 cup coconut sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Instructions:

  1. Mix the wet ingredients and dry ingredients together in two separate bowls (you can add chocolate chunks into the dough as well as save some to melt and drizzle over top!)

  2. Allow the dough to chill for 30 minutes

  3. Heat the oven to 350F

  4. Bake for about 10 minutes
