Maple Pumpkin Oat Bread

We all know the drill. Very ripe bananas make very good banana bread. Add pumpkin and a few more spices into the mix and you’ve got yourself one deliciously cozy bread.

Maple Pumpkin Oat Bread

Things I used:

Wet-

Two ripe bananas

1/2 cup pumpkin purée

1/4 cup maple syrup

1/2 tsp vanilla

Dry-

1 + 1/4 cup gluten free rolled oats

3/4 cup almond flour

1 tsp pumpkin spice

1 tsp cinnamon

1/2 tsp allspice

1/4 tsp cardamom

How I did it:

Mix all dry ingredients together in one bowl

Mash ripe bananas and add remaining wet ingredients

Combine the two mixes together

Pour the mixture into a lined or greased bread pan

Optional: sprinkle pumpkin seeds and a bit more cinnamon on top

Bake at 350 for about 45 minutes!
