Chocolate Chunk Macadamia Nut Cookies

If you’ve ever had a macadamia nut, then you know exactly why I’m obsessed with them.

And you probably are too.

I know the whole “macadamia nut cookie” thing usually includes white chocolate… but have you ever had DARK chocolate with macadamia nuts? That’s the real pairing.

These cookies have all the tropical goods. Dates, dark chocolate, macadamia nuts, sea salt.

They’re a real good time.

Give yourself about 20 minutes to bake these and you’ll get what I mean.

Dark Chocolate Chunk Macadamia Nut Cookies

  • bake time: 8-10 min

Yields: 9 cookies


Ingredients:

Dry:

  • 1 cup (80g) rolled oats
  • 3/4 cup (90) whole wheat flour
  • 2 tbsp almond milk
  • 1/4 cup (60g) chocolate chunks
  • 2 tbsp chopped macadamia nuts
  • 1 tsp baking powder
  • 1/2 tsp sea salt

Wet:

  • 1 egg
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1/4 cup (50g) dates
  • 1 tsp baking powder
  • 3 tbsp olive oil
  • 2 tbsp (20g) macadamia nuts
  • 2 tbsp honey
  • 1 tsp vanilla extract

Instructions:

  1. Blend oats into a fine flour
  2. Thoroughly the combined flours, baking powder, and sea salt
  3. Blend dates, olive oil, 2 tbsp of macadamia nuts, milk, honey, and vanilla extract together until smooth
  4. Gently mix the egg into the wet mixture
  5. Combine the wet and dry mixtures until a thick dough forms
  6. Chop the remaining macadamia nuts
  7. Gently fold the chopped nuts and chocolate chunks to the mixture, do not over mix!
  8. Roll into 9 dough balls and flatten on a greased or lined pan
  9. Bake at 350F for 8-10 minutes
