PB&J Pancakes

It's my favorite time of the day...again! B R E A K F A S T!!! What a perfect time to celebrate another day of waking up and taking on the world.

April 2nd was national pb&j day. Subsequently, I found myself wrapped in a virtual vortex of all different concoctions of the beloved combo. I really didn't mind it at all. But it sparked a huge interest in my heart, I wanted to put my own spin on the classic mix and thought no better way to do so than pancakes!

Peanut Butter & Jam Banana Pancakes

This mixture made two servings of pancakes! 

How I did it:

Blend oats until they are similar consistency to flour

Mash ripe banana, add almond milk, vanilla extract, and egg and mix until combined

Add oat flour, cacao powder, and cinnamon to the wet ingredient mixture and whisk until evenly combined

On a greased skillet, spoon 1/4 cup of the pancake batter into the pan and cook until bubbles start to pop then flip to cook the next side

Chop the plum and add the bits, blackberries, and chia seeds and a tablespoon of water to a pan and stir on a low heat until the jam mix has thickened

Top the pancakes with the peanut butter, warm jam, and drizzle a bit of honey on for the best version of a PB&J you've ever had!
