Peanut Butter Cups

With only TWO ingredients inside, these things are stupidly easy to make! (and even easier to eat, if we're being real) 

I am an avid eater of all shapes and sizes of Reese's products. From pumpkins, Christmas trees, hearts, and easter eggs to mini cups, giant cups, and white chocolate cups, I love them all. Also, if you've never tried the Reese's Dessert Bar, mentally prepare yourself because it's ridiculous. In high school I would practically finish the entire tray on my own... luckily it didn't do much damage since I was dancing countless hours of the week. 

Since developing new eyes and an overflowing heart for healthy foods, I've been a bit distraught at the absence of the chocolatey-peanut-buttery-Godsend in my life. I still love Reese's more than most. What I don't love is the amount of sugar that's packed inside those babies, though. 

With Easter coming up quick, I was quite motivated to try and make a healthier version of my favorite candy in preparation for all the goods I'd run into on Sunday. They were surprisingly very quick and easy to make! I tried my best to make these little candies as pretty as could be, but it's rather difficult to create a candy as pretty as a Reese's cup when you're not a machine. Taste overpowers looks, beauty is on the inside. 

My family loved these just as much as I did! I hope you do, too. 

Peanut Butter Cups

Things I used:

  • Organic Peanut Butter Powder: 1/3 cup mixed with water (PBfit is the brand I used. However, you can use any kind of peanut butter you want. I just chose to use powdered PB mix as it has far less fat than normal peanut butter! I love it)

  • Trader Joe's Semi-Sweet Chocolate Chips: 2/3 cups melted

  • Mini muffin tin

  • 12 mini muffin liners

How I did it:

Line the muffin tin with the liners

Slowly melt the chocolate chips at a low power-level for a longer time in the microwave (be sure to consistently check and stir the chocolate)

Pour a small amount of melted chocolate into the liners (just enough to cover the bottom) and spread a bit up the sides to create a bowl-effect

Place the tray into the freezer until the chocolate has firmed back up

Mix the PB powder with water and stir until a buttery consistency has formed

Scoop a teaspoon-ish amount of peanut butter into the center of the frozen chocolate cups

Pour more chocolate over the peanut butter and level the top

Place the tray back in the freezer until the chocolate has firmed up enough to eat

 

Don't get me wrong, if I happen to stumble upon a few (dozen) Reese's Eggs this Easter, I will gladly take them (all). But as for the rest of the year, I'm gonna stick with these healthier little guys!
