Paprika & Basil Eggplant

Back to the running theme of “I am by far the oldest 21-year-old I know": I got an herb garden for my 21st birthday. Best gift ever!!!

My grandma’s green thumb has always smeared it’s way across our planters. I’ve raved about her gardening gifts before, but really, all of the homegrown vegetables and fruits and herbs we’d grown up eating thanks to her are the biggest reason why my own mini garden was such a gift.

About a month ago, I watched a movie that only fueled my desire to one day be the owner of an enormous garden. My own little market with five finger discount 24/7 (as long as the goods are in season, of course)… a dream!!

Meryl Streep in “It’s Complicated” was living all my garden dreams. If you don’t know what I’m talking about, Google “It’s Complicated garden” and see for yourself. And don’t be surprised if suddenly you have and want to step out into your garden with a cute little wicker basket and pick fresh vegetables and herbs when you’re ready to get cooking.

Anyway, I find joy in being able to walk a few feet out of my kitchen, into the sunshine, and get my hands on some fresh herbs. Herbs are the cards up any cook’s sleeve. Take any average, everyday meal and make that glitter gold with a sprig or two of the fresh stuff.

To make things easier, grab some basil and try this air-fried eggplant:

Paprika & Basil Eggplant

Things I used:

Eggplant

Fresh basil

Paprika

Crushed black pepper

Avocado oil

How I did it:

Cut the eggplant into even rounds

Spray a light coating of avocado oil on both sides

Sprinkle a generous amount of the spices and chopped basil on both sides

Air fry at 400° for 13-15 minutes
