White Miso Olive Oil Roasted Sweet Potatoes with Autumn Garnished Hummus

2 large sweet potatoes

1 tbsp olive oil

1 tbsp white miso paste

2 tsp date syrup

1 tsp onion powder

Instructions:

  1. Pre-heat your oven to 375F

  2. Wash the sweet potatoes (seriously, scrub them)

  3. Leaving the skin on, cut the potatoes into 1/2 inch cubes

  4. Mix the miso paste with water until the paste becomes thin enough to drizzle. Mix with olive oil, onion and date syrup

  5. Cook the potatoes for 40-45 minutes or until they start to get crispy. Flip them with a spatula halfway or every 15 minutes to get a more even roast

  6. Enjoy as is or with my recent favorite hummus dip

    -Using your favorite hummus, add pomegranate arils, pepitas, crushed pecans and date syrup to the top to add some seasonal flavor!
