White Miso Olive Oil Roasted Sweet Potatoes with Autumn Garnished Hummus
2 large sweet potatoes
1 tbsp olive oil
1 tbsp white miso paste
2 tsp date syrup
1 tsp onion powder
Instructions:
Pre-heat your oven to 375F
Wash the sweet potatoes (seriously, scrub them)
Leaving the skin on, cut the potatoes into 1/2 inch cubes
Mix the miso paste with water until the paste becomes thin enough to drizzle. Mix with olive oil, onion and date syrup
Cook the potatoes for 40-45 minutes or until they start to get crispy. Flip them with a spatula halfway or every 15 minutes to get a more even roast
Enjoy as is or with my recent favorite hummus dip
-Using your favorite hummus, add pomegranate arils, pepitas, crushed pecans and date syrup to the top to add some seasonal flavor!
