Creamy Coconut Basil Rice

1 + 1/2 cup dry brown rice

1 cup water

1 cup veggie broth

3/4 coconut milk (use more if you want it super creamy, most of the 3/4 cup absorbs into the rice to make it fluffy)

1/4 cup fresh basil, chopped

3 cloves garlic, thinly sliced

2 tsp sea salt

Instructions:

  1. Two choices to prepare the rice: soak overnight and rinse or just rinse

  2. Bring rice, water, broth, and sea salt to a boil

  3. Add in chopped basil and garlic then reduce to a simmer (low flame) and cover for about 5 minutes or until the water begins to absorb

  4. Bring rice back up to a medium-low heat, add coconut milk and stir until it begins to bubble again

  5. Stir, reduce back to a simmer, and cover for about 20 minutes or until the rice absorbs the coconut milk

Serve with chickpeas, veggies, and a squeeze of fresh lime! Tahini was also added to my bowl after being photographed. Increeeedible.
