Garlic & Sage White Bean Sweet Potato Stew

Garlic & Sage White Bean Potato Stew

Things I used:

1 tbsp olive oil

2 garlic cloves, minced

2 large carrots, chopped

1 large sweet potato, cubed

1 shallot, diced

3 cups chicken bone/veggie broth

3 cups water

1 can white cannellini beans, drained and rinsed

1 large leaf of kale

2 tsp apple cider vinegar

1 + 1/2 tsp dried sage

Sea salt & black pepper to taste

How I did it:

Add olive oil to a medium pot and allow to heat on a medium flame

Cook shallots until translucent

Add garlic, carrots and sweet potato with a tablespoon of water

Cover and all to steam on a low heat for 2-3 minutes

Add the rest of the ingredients, stir

Bring to boil, reduce to simmer for 30 minutes minutes
