Banana Sweetened Strawberry Snack Cake w/ Maple Cacao Yogurt Frosting
Strawberry Snack Cake with Maple Cacao Yogurt Frosting
Dry:
1 + 1/4 cup (125g) rolled oats
2/3 cup (85g) almond flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
Wet:
2 very ripe bananas (175g total)
1 cup (140g) frozen strawberries
1 tsp vanilla extract
Frosting:
1/2 cup (115g) greek yogurt (can sub thick vegan yogurt or coconut cream)
2 tbsp pure maple syrup
1.5 tbsp cacao
2 tbsp granulated sugar
1/2 tsp vanilla extract
Instructions:
Preheat the oven to 350F
Blend rolled oats in a fine flour
Add the oat flour to a bowl with the rest of the dry ingredients
Mix the dry ingredients until evenly combined
Add the bananas, vanilla, and strawberries to a blender and blend into an even consistency
Mix the wet ingredients into the dry
Add the cake batter to a lined or greased baking tin
Bake for 15-18 minutes
While allowing the cake to cool, mix the frosting ingredients together
Frost to your desired thickness

Note: The frosting will thicken if stored in the fridge. If looking for a thicker frosting, make the frosting before the cake and refrigerate until the cake is baked and cooled.
