Salted Pecan Shortbread Cookies
Yield: 22 cookies
1 cup (112g) almond flour
1 cup (80g) oat flour
1/2 cup aquafaba
1/4 cup pecans, crushed or chopped
1/4 cup (45g) coconut sugar
1 tbsp maple syrup
2 tsp chia seeds
1/4 teaspoon almond extract
1/4 teaspoon salt
Instructions:
Blend the coconut sugar and chia seeds until powdered, about 30 seconds
Mix all the dry ingredients together
Blend the aquafaba, maple syrup, and almond extract together for about 30 seconds until white and fluffy
Mix the wet and dry ingredients together then chill for 30 minutes before rolling into a log
Once the log is rolled, freeze for at least 3 hours or even better overnight
Pre-heat oven to 350°F and pull the log out of the oven and allow to thaw for about 10 minutes before slicing into even rounds, about 1/4” each
Bake for 16-18 minutes or until they feel firm when you poke them
Top with flakey salt
Enjoy warm, chilled, on their own or with a cozy drink!
