Peach Cobbler Chia Pudding

Seasonal transitions are so awkward, don’t deny it.

Even more awkward, two sides of the spectrum exist making the tension even more unbearable. Once September hits, people either go full-blown Halloween mode or tell those who go full-blown Halloween mode to chill out.

I’d like to believe I’m a moderate on this change-of-the-season political spectrum. Healthily excited for the coming Autumn while still embracing the end of summer. The weather where I live is namely to blame for this, too. When it’s averaging 85°, I can’t throw on a sweater and pretend that drinking hot chai is a smart decision.

I think we need to make a stronger effort to enjoy the end of summer. Soon enough our farmer’s markets are going to be loaded with all kinds of squashes and the end of this incredible summer fruit season will be but a memory. Stone fruit season is going to be over before we know it!! I’m making the most of the transition with this peach cobbler inspired chia pudding!!

Peach Cobbler Chia Pudding

Things I used:

1/4 cup chia seeds

1 cup flax milk (any milk of choice will work just fine)

1 tsp almond extract

1 tsp cinnamon

Handful of cubed peaches

Granola: I used this coconut spice one from Bob’s Red Mill. They also have a maple sea salt flavor that would be a great tribute to autumn flavors! I would’ve used the maple had I not polished the bag off soon after getting it. Either way, you can’t go wrong with their granola.

How I did it:

Mix all ingredients in a mason jar

Soak overnight to let thicken

In the morning, stir & top with more peaches and granola (the cobbler-part of this pudding recipe)

Enjoy the stone fruits while you can. Happy September!
