Nut-Buttery Banana Bread

I have always always always been in love with banana bread. I've tried so many different kinds in my twenty years; with blueberries, or cream cheese, or chocolate chips, or walnuts... and I've pretty much loved them all the same. It's so hard to go wrong with pairing bananas and bread... it probably isn't possible to mess up.

As I've ventured down a path of chasing wellness and fueling my body with foods that don't make me crash from a sugar rush or give me a stomach ache from immense amounts of butter, I've been less of a sweet-bread connoisseur. Thankfully, I've definitely learned a few tricks in the trade when it comes to transforming good-for-your-soul recipes into good-for-your-soul-and-body recipes, so I'm able to enjoy banana bread as long as I'm down to make it! It's so easy it's hard not to be down.

After analyzing a basic banana bread recipe, I decided to play around with the ingredients, swap a few things for a few better things, and I was #blessed by the outcome.

Fool proof is an understatement in regards to making this healthy and astronomically delicious sweet-bread. 

Nut-Buttery Banana Bread

Things I used

Dry Ingredients

  • 70g old-fashioned oats

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp cinnamon

Wet Ingredients

  • 2 large eggs

  • 2 medium ripe bananas

  • 2 tbsp pure maple syrup

  • 2 tbsp cashew butter: Check your ingredients pals! There should only be cashews inside this. Maybe even sea salt if you roll that way. No sugar or oils should be in here other than the oil that naturally comes from blending nuts. Separation is a natural occurrence that is easily fixed by giving the butter a quick churn.

  • 1 tbsp peanut butter: Same thing goes for peanut butter (and almond, hazelnut, walnut, seed butter for that matter). Onnnnnly peanuts should be in here!!!

  • 1 tsp vanilla extract

How I did it

Preheat the oven to 350°F

Put all dry ingredients into a blender and blend until the oats turn into a floury consistency

In a bowl, whisk eggs until yolk and white is evenly combined

Add ripe bananas to the bowl and mash until desired consistency (I like to keep my bananas a bit chunkier so I make sure to not over mash them)

Add the remaining wet ingredients until mixed together

Pour in the dry ingredient mixture and fold until an even mixture forms (literally just mix wet and dry ingredients)

Pour the bread batter evenly into a nonstick bread pan (spray lightly with coconut oil spray or line parchment paper)

Bake for 40-45 minutes

 

That's it!!! You can obviously add whatever you want to this recipe. Dark chocolate chips, shredded carrots (I'm not not down for carrot cake banana bread), shredded zucchini, chopped walnuts, anything your little heart desires, truly. 

This recipe makes 8 slices of bread that are sure to make your heart and tummy happy!!
