Apple Pie Overnight Oats

Happy August!!

Once August hits I kinda start to crave autumn! Okay, well I guess if we're being honest, I've been in a bit of a slump the past... um... month or so, because I so desperately want it to be Christmas time. No shame here. 

Overnight oats are super convenient because they're all ready to eat in the morning, unless you want to heat them up like I do (highly suggested)! Even though it’s been a consistent 90 degrees in Southern California and will be until about October (or hell freezes over), these Apple Pie Overnight Oats were the perfect way to start the month!! 

 

Apple Pie Overnight Oats

Last night, I used:

-1/2 cup rolled oats

-1 tbsp chia seeds

-1 scoop collagen peptides: I have recently been incorporating extra collagen into my diet. It has been about a month since I started doing so, and honestly I've noticed a huge improvement in my hair, skin, and nail health! This is the collagen I use. Read more about the benefits here!

-A handful of chopped pecans

-1/2 of an apple, diced

-Lots and lots and lots of cinnamon!!! Obviously to your preference, but I suggest you add enough so that it smells like Thanksgiving exploded in your mason jar.

-Unsweetened vanilla almond milk

 

Here's how I did it:

Add all the contents except the almond milk to your mason jar.

Secure the lid on your jar and shake until the contents are all mixed together!

Add just enough almond milk to cover the oats and give it another good shake

Refrigerate your oats overnight!!! (obviously)

In the morning, I decided to heat my oats up to really get that fresh, homemade apple pie vibe going on

After the oats were all nice and warmed up, I added a tad bit more vanilla almond milk to make the oats super creamy!

 

If you're wanting it to be fall as desperately as I am, you seriously need to try these out. They're delicious and simple as pie!!
