Gingerbread Cookie Dough Bites
Santa called. He doesn’t want cookies this year.
He wants cookie dough. Gingerbread cookie dough.
Considering this recipe so darn easy, I’m honestly very pleased with how tasty it is.
If I’m being transparent, this semester has been tough. I’m in the middle of my finals season and it’s brutal (file “brutal finals” under: things that are seriously not jolly). I feel like there’s barely enough time to get everything done, let alone make fun Christmassy recipes. Time-management and the reminder, “I’m blessed to be where I am, to know who I know, and to do the things I’m doing” have been my lifelines. Not to get too self-helpy you, but if I could advise you on a few things, it’d be to manage your time, be grateful…
and make these gingerbread cookie dough bites.

I’m powering through an ocean of papers and studying for exams, but I’m very grateful to have access to education and for finding the time to make a little festive treat.
Do what you need to do, actively recognize how lucky you are to live your life, and FIND THE TIME TO ENJOY THE GOOD STUFF! (If you didn’t catch the hint, this recipe is a prime example of “good stuff” worth finding time to enjoy).
Gingerbread Cookie Dough Bites
Things I used:
1 cup oat flour (rolled oats, blended)
3 tbsp maple syrup
2 tbsp almond butter
2 tsp ground ginger
2 tsp cinnamon
2 tsp ground flax
1/2 tsp cloves
1/2 tsp nutmeg
How I did it:
Mix the oat flour and spices together
Stir in the maple syrup and almond butter
Enjoy immediately or roll into balls, flatten, maybe drizzle some melted dark chocolate on top, and freeze for about 15 minutes (recommended!!!)
