Coconut Zucchini Muffins w/ Grapefruit Yogurt Glaze
Coconut Zucchini Muffins
Wet:
1 egg
1/2 cup (120g) plain greek yogurt
1/4 cup grated zucchini
2 tbsp (40g) Just Date Syrup (use code KAILEE10 for a discount; ou can swap for maple or honey if needed, but JDS is reaaaally good and it’s woman-owned and they’re incredible)
2 tsp vanilla extract
Dry:
3/4 cup (60g) oats, blended
1/4 cup (75g) all purpose flour
1/4 cup coconut sugar (brown sugar works)
1/4 cup unsweetened shredded coconut
3 tbsp (17g) coconut flour
3/4 tsp sea salt
1/2 tsp baking soda
Grapefruit Yogurt Glaze
3-4 tbsp yogurt depending on desired consistency
2 tbsp fresh squeeze grapefruit
1 tbsp Just Date Syrup
Instructions:
In two separate bowls, mix the wet and dry ingredients
Add the dry into the wet and full incorporate
Bake at 350F for about 18-20 minutes or until a toothpick comes out clean (check around 15!)
Mix the glaze while the muffins are cooling then drizzle away!
