Apple Pie Spice Cookies
Wet:
Homemade caramelized applesauce, or 2 cups ~storebought~
1 egg
3 tbsp coconut oil, divided
1 tbsp maple syrup
1 tsp vanilla extract
1 tsp acv
Dry:
1 cup (120g) all purpose flour
1 cup (80g) rolled oats, blended into a flour
1/3 cup granulated sugar
4 tsp cinnamon
3/4 tsp ginger
1/2 tsp nutmeg
1/2 tsp baking soda
1/2 tsp baking powder
Sprinkle:
2 tbsp granulated sugar + 1 tsp cinnamon
Instructions:
Cube apples and toss in 1 tbsp coconut oil and cinnamon
Add to a pan on medium low heat, add 1 tbsp water, cover and steam for 5 minutes, then reduce to a low flame for another 5 minutes
Allow apples to cool while mixing wet ingredients and dry ingredients in two separate bowls
Blend the apples to desired consistency (I like to leave some apple chunks!)
Mix the applesauce into the wet ingredients
Add the dry ingredients into the wet until fully combined
Refrigerate dough for 30 minutes
Roll into 12 equal size dough balls and flatten before placing on a lined or greased cookie sheet
Sprinkle with cinnamon sugar
Bake at 350 for 18-20 minutes
