Lemony Flatbread & Greek Yogurt Sauce
This was the most spontaneous post I have done yet.
I thought today was just gonna be a wing-it type of lunch, throw together what sounds good and that would be that. But folks... this lunch was hardcore evidence that winging it will lead you to success!!! I took one bite of this flatbread and instantly regretted not snapping a couple of photos before digging in. Oh well, you live and you learn.
Let's get to the good stuff! (Seriously)
Lemony & Peppery Flatbread w/ Greek Yogurt Sauce
Things I used:
1 whole wheat pita bread
Sabra roasted pine nut hummus
Tabbouleh salad: basic recipe found here
Roasted chicken from Trader Joe's
Plain 0% fat greek yogurt: I used this one
About 1/4 of a fresh squeezed lemon
1/4 clove minced garlic
A couple dashes of a spice mix found in my spice cupboard: thyme & oregano
A sprinkle of onion powder
Cracked black pepper
How I did it:
Slice the pita into halves and toast on a low setting in the toaster (the goal is for the bread to become crispy and sturdy enough to hold the toppings while not toasting so much that it breaks apart when you bite into it)
On a separate plate, squeeze some lemon juice and crack pepper over the roasted chicken breast. Heat in microwave on a low power setting to stop the chicken from drying out (ex: I did 3 minutes on power level 4)
Spread a generous layer of your hummus across both halves of the pita flatbread
Add a few spoonfuls of tabbouleh salad across the top of the hummus
Cover the tabbouleh salad with your now-warm chicken
In a small bowl, add a heaping spoonful of the plain greek yogurt, a generous squeeze of lemon juice, minced garlic, and sprinkles of thyme, oregano, and onion powder
Mix together until the lemon juice and the spices are evenly combined into the yogurt
I reheated my completed flatbread, without the yogurt sauce, for about a minute on half power, this is optional but the warmth really brings all the flavors together!
Add a dollop or twenty of your yummy lemon yogurt sauce onto your flatbread and enjoy!

On the side of this dish I had a handful of Black Pepper Green Pea Crisps. These are a great side/snack in place of potato or tortilla chips. I also drank a cup of organic green tea with original, unsweet almond milk. I just brew 8oz hot water in my Keurig and fill the rest of my mug with almond milk and let the tea steep for about 5 minutes! I love this drink, I get it at any coffee shop I go to!
