Chicken Stir-Fry Bowl

Hi hi!

I love making stir-fries with my whole heart. (Okay, that's an exaggeration, but I want to emphasize how near and dear this dish actually is to my heart) They are so easy and customizable and quick!

After going through a period of time where I made this dish once a day, with only minor tweaks in ingredients and flavors, I lost interest for a while. But today my hungry eyes were re-opened to the world of stir-fry and I got cooking!

Chicken Stir-Fry Bowl

Things I used:

  • Chicken breast: diced

  • Frozen cauliflower

  • A few heaping handfuls of spinach

  • A handful of unsalted cashews

  • 1/2 cup frozen edamame

  • Sliced Carrots

  • Green Onions

  • A clove and a half of garlic

  • Black pepper

  • Sesame Oil

  • Onion Powder

How I did it:

Cook the chicken on a lightly oiled pan and crush some black pepper on top

Remove the chicken from the pan

Add the carrots, garlic, green onions, cashews, and sesame oil to the pan & stir until everything is roughly coated in the oil

Add the edamame and spinach (these things cook down a lot faster so I wait a few minutes to add them)

Add the chicken back in and stir everything together, then remove from pan & add to bowl

In a blender, pulse the frozen cauliflower until only tiny, rice-sized pieces remain

Add the cauliflower rice into the empty, already-used pan

Eyeball addition of onion powder to lightly season

Stir occasionally for a few minutes until color changes to a subtle beige 

Remove from the heat and add to your bowl!

THAT'S IT!!! 

Simple, delicious, and healthy! I love how easy it is to season this meal since the tiny presence of sesame oil adds such a great flavor. 

It takes more time scanning your fridge/freezer and deciding what your going to add than it takes to actually cook and devour this.
