Berry Frozen Yogurt Bites

HAPPY VALENTINE'S DAY!

I don't know about you, but I love the 14th of February (probably more than most if we're being real). Not only is it the day filled with reds and pinks and hearts and polka-dots and CHOCOLATE... it's my dad's birthday! 

I am always so tempted around holidays like Valentine's and Easter to dive into the candy aisle and come out with family-sized bags of treats. Don't read me wrong, it's okay to indulge in candies and desserts. But when you're trying to fuel your system with nutrients that promote health and wellness, the possibilities for sweet treats that aren't loaded with artificial flavors, sugars, and colors are limitless!

I thought it would be fun to make a little healthy treat for my dad's birthday, so I whipped up the easiest, protein packed dessert EVER.

Berry Frozen Yogurt Bites

Things I used:

  • Cupcake/muffin liners: This makes the perfect little portion size!

  • 0% fat, plain greek yogurt: It's pretty normal for flavored yogurts to come packed with unnatural sugars and sweeteners, I prefer to buy plain yogurt so I can add my own fruits and sweetness to it if that's what I'm going for! Also, greek yogurt is packed with protein; one serving (1 cup) has about 22g of protein.

    • If you don't prefer the taste of plain greek yogurt, you're more than welcome to stir some cinnamon or honey in before adding it to the cupcake liners!

  • Raw almonds: 1/4 cup chopped into tiny pieces

  • Coconut oil: 1 tbsp

  • Strawberries: sliced

  • Raspberries

How I did it:

Set 5 of the baking liners into a muffin tin

Chop almonds (or use equivalent portion of almond meal)

Stir in organic coconut oil to make the crust of the yogurt cups & add a nice, subtle flavor! (If preferred, you can add 2 tbsp of coconut sugar to the almond/oil mix to sweeten the crust)

Evenly divide the crust mixture into the liners, press down with your thumb to create an even layer at the bottom

Scoop 1-2 tbsp of greek yogurt on top of the crust

Add your choice of berries

Freeze for a few hours & allow to thaw before eating
