Cinnamon Maple Apple Muffins
I would be absolutely fibbing if I had said apples weren’t my favorite fruit. Considering how obsessed I am with fruit, I put these guys on a strong pedestal. Even though apples are a 24/7/365 love for me, something about apples in autumn is just… special.
Autumn brings us so many great foods and activities; apples and apple-picking being among the most loved on my end. After my second annual apple-picking excursion with my pals a couple weeks back, I came home with more apples than I knew what to do with—a problem I genuinely never expected myself to face—so I pulled out my muffin tin and went to town.
Here I am, weeks later and long out of fresh picked apples, still messing around with apple-baking and I’m loving every second of it!
Like most things, I winged this recipe. I have now made a few different versions, muffins, bars, and replacing maple syrup with honey (you def need to try that after you try the one below), and even adding some chopped walnuts in there for a little more texture. Each time I’ve made these little guys, I’ve fallen in love all over again. Moral of the story, I love apples and I love them even more when they’re baked into healthy goods.

Cinnamon Maple Apple Muffins
Things I used:
3/4 cup oat flour
2 tsp cinnamon
1/2 tsp baking powder
1/4 cup apple sauce: I’ve used gala, granny smith, and apples fresh picked from the tree. Use whatever you have on hand!
1/4 cup pure maple syrup
1 large egg
1/2 tsp vanilla extract
1/4 cup crunchy almond butter
How I did it:
pre-heat the oven to 350°F
mix all dry ingredients together until evenly combined (oats, flour, cinnamon, and baking powder)
add apple sauce, vanilla extract, and the egg to a bowl and mix until egg is nicely incorporated
pour the blended mixture into the bowl with the dry ingredients and mix
fold the crunch almond butter into the mixture
evenly distribute the mixture into a muffin tin or a small square baking tray if you’re feeling it!! (I’ve done both and have been quite pleased each time)
