Cinq Spice Cookies

Dry:

160g (2 cups) rolled oats, blended into a flour

70g (1/2 cup) coconut sugar

1 tbsp cinnamon

1 tsp allspice

1/2 tsp cardamom

3/4 tsp sea salt

1/2 tsp baking soda

1/4 tsp nutmeg

Wet:

1/4 cup (40g) pitted dates

2 tbsp olive oil

2 tbsp milk of choice

2 tbsp fresh squeezed orange juice

1 tbsp tahini

1 tsp vanilla

Instructions:

  1. Soak dates in olive oil, milk, and orange juice for at least an hour (this step can be omitted but yields a much more flavorful cookie)

  2. Blend the soaking mixture until smooth, then transfer to a bowl

  3. Combine the date blend with the tahini and vanilla until even

  4. In another bowl, mix all of the dry ingredients to ensure the spices and the leavener are fully incorporated

  5. Add the dry mix into the wet, folding until combined

  6. Refrigerate dough for 30 minutes

  7. Heat oven to 350F

  8. Scoop into balls and then flatten on a lined or greased baking tray

  9. Bake for 8-10 minutes, or until the edges begin to golden
